Tamitsu Kitanoshizuku Junmai Ginjyo, bottle hi-iru 100% Kitashizuku from Hokkaido, Japan Polishing ratio 55 Alcohol content 15%. Sake meter - Acidity Fat bottle opened 11/6, posted 11/25 This Tamitsu is a sake that was shipped in small quantities on a trial basis. The liquor store where I visited said the same thing 😅. I've never seen it before, right? I have nothing but high expectations for Tamitsu after a long time 👍. The smell after opening the bottle is fruity, but the mouthfeel is also sweet rather than fruity, and it tastes like panna cotta or nata de coco? Or nata de coco? The taste in the mouth is clean, light and refreshing, but you can taste the gentle umami until the aftertaste. Delicious! I was also impressed by the fact that it tasted a little light and not like a Tamitsu 🤔. When I went to the liquor store where I bought it the other day and had a chat with the owner, I told him that it was difficult to melt the sake rice the way I wanted, so it was made light. I see...it's fun and educational to talk about sake with a professional like this 🤩I'm sure I'll learn a lot from talking to him again😘.
