Hakurakusei山和星 純米大吟醸 2025 おりがらみ生酒

Yamawa Shuzoten (Yamawa and Washigakuni) and Shinzawa Shuzoten (Hakurakusei and Atago no Matsu) collaborated to brew this limited edition sake, which has been released every New Year at alternating breweries since 2019, and is now in its 7th year. I first had the 2024 version brewed by Yamawa Sake Brewery last year and personally liked it so much that I purchased both the draft and fire-aged versions of the 2025 version brewed by Shinzawa Sake Brewery. Last year's bottle was a beautiful blue bottle, and this year's is also a cool bottle with a luxurious feel. We started with the nama sake.
It has a sweet fruity aroma reminiscent of purple grapes (like Delaware) and a freshness unique to nama-shu. The taste had an excellent balance of sweetness, acidity, bitterness, and umami, with a particularly delicious sweetness and umami from the rice. I felt a slight tingling alcohol sensation, but after a day, it became more relaxed. I am looking forward to the fire-brewed version.
