I'm moving to Kanagawa in March for a new job... I knew I had to check out the local sake brewery... I visited the Seto Sake Brewery in person and purchased this sake! The label on the back of the bottle reads, "Traditional sake brewed using the raw yeast method, which draws out the power of nature. The label on the back of the bottle reads, "A traditional sake made using the traditional ikuhashi-zukuri method that draws out the power of nature... A powerful yet clean sake full of vitality..." The taste is sweet? It is more umami than sweet. However, it soon becomes sharp from the acidity of the sake yeast...and the aftertaste is a nice bitterness! Yes👍It is authentic! I think it is not for beginners. For the sake lovers ❤️, I also purchased a "⭕️" sake with hydrangea yeast 🍶 that goes great with sashimi 😊.

I don't think there are that many places in the prefecture (especially this one) that carry the previous Setoichi, or this kind of Narukata. I see you went to the brewery. I am curious. I'd like to drink it😋.

I'm sure the type of fish you can get in your hometown and Kanagawa will be different, so I'm sure there will be some changes in your sashimi pictures in the future! I'm sure the fish you get in your hometown will be different from the ones you get in Kanagawa.
