Tomorrow (March 9) is my day off from work, so I will take it easy and have a late-night drink.
Junmai sake from Akabu.
I like this sake very much and repeat it every year, but I got it because I wanted to drink it after seeing Macaroni's recent post.
I am sure it is always evolving.
It has a fruity entry, but the basic flavor is the deliciousness of the rice.
It is very easy to drink, and the cup goes down smoothly.
It has a freshness even though it is fire-aged.
It has a cohesive acidity and a very slight bitterness, and has the nostalgia of being a very broad range of food sake.
Serve with tuna and natto, garland chrysanthemum with tuna, sea urchin squid, tofu, pickled cucumber, etc.
I have had the higher ranks of Akabu, but this fire-aged junmai sake is a masterpiece, a masterpiece.
So is Sharaku's fire-aged junmai sake.
My personal impression is that for a standard junmai sake, hi-ire is actually the most stable, tastiest, and most wonderful, even if it is not a draft sake.
Akabu has a good mouthfeel and is better in a 1-sho bottle.
This time I had a 4-gou bottle, and I manacled it. 😅

Akabu's fire-aged junmai sake is very easy to drink and you find yourself drinking more 😅, it's a very good balance.
