A special junmai nama sake made with Matsu Midori's first kitashizuku. Timely, this morning I learned about the development of Kitashizuku from an audio clip I was listening to on my commute to work that was inspired by the Kamikawa Taisetsu Sake Brewery in Hokkaido. Apparently, depending on how it is made, Kitashizuku can be either mellow or refreshing. It has a mild apple aroma, which is unusual for pine midori. The taste is clear, with acidity and astringency at the forefront. However, there is an instant sweetness on the attack, and the core has a strong rice flavor. I was very impressed by this new taste of my favorite Matsumidori. Hmmm...what? But this was sold as a summer sake, but that doesn't mean we lost that favorite summer jun-dai, does it?

Hi Jay & Nobby. I heard that Matsumidori is expanding its sales channels recently, so I hope it will become cheaper to purchase. I look forward to the Summer Jun Dai every year because it is inexpensive and delicious. I hope it will be available again this year...
