Wakayama Pref. Arita-gun. Hiramatsu Honke Sake Brewery. Kin-Aoi Shiboritate Purchased at a sake shop when I went to Wakayama to buy dried fish. I had never seen or heard of this sake. According to the owner of the liquor store, it is probably not available outside of Wakayama. Is it a honjozo? Or is it a regular sake? It's freshly squeezed, but it's already been six months. I had it cold. The initial aroma is mainly alcohol and smells like magic ink. The mouthfeel is clear and smooth for its alcohol content, with a slightly blue citrus-like acidity and a mild umami that expands a bit. My impression is that I feel the acidity the most. Less cloying and easier to drink than expected. After swallowing, a sense of alcohol spreads from the aroma through the nose, and the aftertaste lingers in the mouth with a tingling aftertaste after some time has passed. The sake was chilled to a crisp, so it didn't have much of a sake taste at first, but as the temperature rose and I drank more, it turned into a very authentic sake with a strong sake taste. I would call it a rare sake that I can't usually drink. I posted this at the National Sake Fair, and it didn't take long. Ingredients:Rice (domestic), rice malt (domestic), brewers alcohol Alcohol content: 18 to 19 degrees Celsius

Thank you, bouken 🙇 It's a very rare sake brewery in a way, so much so that people think it's out of business 🤣 only a few people were drinking it at Sake no Wa 😅.
