Sairai Special Junmai Unfiltered Nama Sake (Kitanishi Shuzo/Saitama Prefecture). Sairai is produced by Kitanishi Shuzo, the brewer of Bunraku and Bunraku Reborn. It is a limited distribution brand that will start in 2018 and is meant to be "the arrival of sake from Sai no Kuni (Saitama Prefecture) that will change the world" 🤔. Ryuichiro Kitanishi, the fifth generation brewer, spent five years designing the sake quality, and the concept of Sairai is "the harmony of three elements: aroma, sweetness, and acidity. What he is aiming for is a graceful ginjo aroma, a spreading umami and sweetness of rice, a refined acidity, and a crisp taste. This is the first time for me to try Sairai's special junmai. The appearance is clear crystal. It has a very sour, unripe, berry-like aroma mixed with the aroma of rice. The taste switches from a strong sweetness like strawberry candy to sourness quickly, and the acidity spreads, leaving a slight stimulation and a sharp finish. The impact of the sweetness is so strong that a slight gaseous sensation can be felt afterward. There is also umami in the mid-palate, and each element has an interesting taste that is independent of the others. When you roll it over, the sweetness goes down and the acidity comes up. It has a stronger flavor than the previous Sairai. Due to my inexperience, my perception of the aroma and taste is pulled by the color and design of the etiquette😅.

Hi kan 😃 I was surprised to see the berry red label of this sake because I had an image of pastel-colored labels of Sairai 😳The taste was also clearer than other Sairais I've had.
