Niigata Sake no Jin OSAKA①
This year's event was held at 35 breweries.
We joined bouken on the way and visited twice.
The "Yuki no Mayu" booth.
We saw the brewer, so we started with "Yukinomayu," which had changed its name from "Kosu-Mori" (brewed in the forest).
It seems that all the labels have been changed to "Yukinomayu" already.
He said it was due to trademark issues... but the brewer, the taste, and the price are the same.
This is their first time in Osaka.

Yuki no Mayu Junmai Ginjo.
A rather refreshing and modern taste of the usual brewing forest.
Yuki no Mayu Junmai Daiginjo Yamadanishiki 40
This is my favorite type. It is clear, but not too clear, and has a sweetness to it.
The Junmai Daiginjo with different rice was sold out, but was restocked on my second visit.
Fukanori MIZEN Junmai Ginjo
A two-stage brewing process. It is full-bodied, deep, and has a good umami taste.
Fukashikoto MIZEN Junmai Daiginjo
Beautiful and quite refreshing.
This is the second time.
Yuki no Mayu Junmai Daiginjo Nama Shu Orikagarami
The taste is fresh with lactobacillus taste and sourness. The lactobacillus taste and acidity give it a fresh sweet and sour taste.
A new brewery has been built, and the average age of the brewery's 10 employees is 27.
