The third drink at my favorite yakitori restaurant is Hirakou Shuzo's Hidakami. This time it was a light nigori sake. It's been a year since I've had this label. The lees of Kido's nigori was a huge amount, but this one is called "light nigori" and there was only a little lees, so we only drank the nigori. So, let's have it right away! First, the aroma. Not much of an aroma. When you put it in your mouth, the first impression is that it is delicious with a predominant umami flavor! The mouthfeel is clean. The aftertaste is sweet, spicy, and bitter. This is delicious! Hidakami is a great match for delicious chicken dishes!

Hi ma-ki-! I just got this "Hidakami" myself and was thinking of opening it soon 😁. I was going to pair it with fish, but if it also goes well with yakitori, I'm wondering if I should pair it with Akiyoshi 🤣.
