Hikkami is famous as a sake that goes well with sushi, but this time we tried the "Autumn Agari" version.
The aroma is subdued, with lychee-like nuances.
Mild on the palate with no tanginess.
The mid-palate has a clear acidity and a subtle umami flavor.
The aftertaste is clear with a hint of bitterness and acidity.
Overall, it is mild and mild.
It was a bit out of place with sashimi, but it was a perfect marriage with vinegared dishes.
Maybe the "match with sushi" is the "vinegared rice" element...?
