Late night sake in the autumn. I'm just late because of work (tohoho), but I'll open a good bottle of sake to comfort myself. I'm looking forward to the Homasu Go Nozomi sake released for the summer, which rumor has it has a strong acidity. The aroma is citrusy, which can be detected just by bringing the nose close to it. The gasiness is strong as usual. The sweetness is perceptible, but this time the acidity comes first. It is characterized by a stimulating sourness rather than the usual cute sweetness. My favorite! The acidity continues until the end, and finishes gently, with the addition of a complexity that is typical of the producing region. This is my favorite San-do of the last few years. It has a flavor similar to that of Shinsei, but with a strong San-do character!
