Mutsu Hachisen, the consecutive opening of the bottle 🎉.
This time it's the Mixid brewery's Utage 😄.
The Mixied Series is a challenge sake for Mutsu Hachisen's young brewers.
Utage is the work of Ryuji Takimoto, who has been a brewer for 5 years. The label is cute😍.
Let's have it 🍶.
Not much aroma.
It has a soft texture in the mouth, which is typical of Mutsu Hachisen.
The sweetness spreads, but the spiciness starts to follow in the middle.
I was expecting it to get sharp, but it left the spiciness behind.
Hmmm... 😓.
Maybe it's not my favorite type... 💧.
If the spiciness would clean up, it would be easier to drink.
It's spicy on its own, but it's delicious if drunk as a food sake 😋.
I feel it is quite similar to the balance of the standard Mutsu Hachisen.
It's a challenge sake, so maybe it should have been more unique 🧐.
But I want to support the young brewers doing their best 📣.
I want more young people to know the taste of sake and I want them to be excited about it.
I will continue to support these young brewers 😊.

This year I learned how delicious Hakusen's sake is, so next year I would like to encounter such a non-regular sake 😊.
