This Jikin is already long overdue.
I'll have it cold.
When the bottle was opened, there was a sizzling sound of gas.
The color is clear and almost transparent.
The top aroma is a soft, deep, sweet fruit ginjo aroma.
The mouthfeel is full of acidity that spreads on the tongue.
The taste is fresh and fruity, with a deep umami flavor and a slight citrus acidity.
The fruity aroma that passes through the nose spreads from the first hint of aroma, and is coated with a sweetness like cotton candy, with a rich umami flavor at the back.
The taste is a little spicy for a Jikin.
The taste is sweet and delicious, but the degree of sweetness is moderate.
It's been in the fridge for more than half a year, but I think the flavor has deepened and become more delicious. I don't know 🤔...

I recently opened a bottle of Hachitan-nishiki and it has the same impression, but it has a deeper taste and all of them are "Jikin".
