Most of them had never seen Matsuo before.
The brand name Matsuo comes from Matsuo Taisha Shrine in Kyoto, the god of brewing.
The brewery brews all of its sake with Yamae-Nishiki, and a liquor store in Shiga started doing business with them, so they changed their planned sake to Matsuo at a moment's notice.

The sake is gorgeous and fresh, not like a fire-aged sake.
It has a smooth and clean mouthfeel with a firm sweetness.
I looked up the sake again to write this review and was surprised to see that it is an expensive sake with a 35% rice polishing ratio 😳.
