(We took a break at the shochu brewery right next to the Miino Kotobuki Brewery, where we drank only ginseng shochu and left.
We still have a long way to go😅.
The second shochu brewery is located 2 stops away from Oshiro station on the Nishitetsu line.
The second brewery is Yamabusubi Shuzo, which is just a short walk from Oshiro station.
The sake I drink the most among Fukuoka sake!
So let's hit ❗️
First, the usual free tasting corner
(1) Junmai Ginjo Yamadanishiki Dry
All domestic Yamadanishiki (produced in Munakata❓) is used.
The mouthfeel is clean and dry.
The sweetness and umami come out from the dryness.
After a delay, the bitterness appears and quickly finishes.
This gradation of flavors!
It must be the work of Yamada-Nishiki, an excellent rice for sake brewing.

Fukuoka Prefecture's sake breweries are concentrated in the Chikugo region in the southern part of the prefecture, and among them, Yamabusyu is my favorite ❤️
