At room temperature. Yellowish, caramelized aroma with a mild lactic acidity. Mild mouthfeel. When you drink it, you first taste the acidity, and then the taste of rice with a hint of grain. As it rolls around in the mouth, there is a sweetness like burnt candy, caramel, and a spread of umami... but I was a bit concerned about the oily bran-like aroma, although it is faint. Is this peculiar taste good?
On a different note from sake, do you want some mushrooms? I was surprised to see a large block of mushrooms still growing on the floor 😆 They are as big as a toaster 😂 I had them with charred pork marinated in miso and stir-fried hiratake mushrooms and shiitake mushrooms with garlic. The chewy texture is addictive!
