I went to Kawagoe on a weekday off today, ate udon at Musashino Udon Shincha and bought some Kagamiyama at the Koedo Kagamiyama Sake Brewery store in Koedo Kurasato.
It has a nice acidity from the raw yeast, but it is light and crisp acidity.
Kagamiyama is my sake of choice, and I will continue to watch for it.
