Not Yamada Nishiki, but Watarifune. Yamada-Nishiki is like Nadeshiko yeast. It smells like grapes. When you drink it, it tastes like grape. Bitterness is trace.
It is a little short on sweetness....
I'd like to buy Yamadanishiki if I see it.
