At last, the autumn season is here. When I think of hiyaoroshi, the first thing that comes to mind is Kaiun and Tsururei. Kaiun's hiyaoroshi is exquisite in its soft entry, delicious flavor, and calm balance. I would say it has dignity. I enjoyed it with grilled swordfish, sashimi, and shiitake mushrooms.
