Score: ☆☆☆☆ This is the Yamamoto version of sake brewed with Ichi-go yeast at several breweries in the prefecture as part of the 100th anniversary project of the Yamauchi Toji Association: ❣️ The Echigo Touji and Nanbu Touji are well known throughout Japan, but Akita's Yamauchi Touji has a slightly different background. Usually, the sake brewing industry has been developed as a local industry for a long time, and sake brewing techniques are nurtured to a certain extent, which is then used as the basis for the development of the region's sake brewing industry. However, in Yamauchi Village (now Yokote City), where Yamauchi Toji was born, there was no sake brewing as a local industry, and it seems to have been born out of pure "migrant labor". In Yamauchi Village, where many families were farmers, there were few places to work during the off-season, and sake breweries gradually took root as a wintertime job, which is said to have led to the birth of the Yamauchi Toji. In 1922, the "Yamauchi Toji Training Association" was established for the purpose of training and improving the skills of toji, as well as smoothly securing and supplying brewery workers. 100 years have passed since then, and sake breweries in the prefecture have brewed commemorative sake with Kyokai No. 1 yeast, which was registered 100 years ago.
