I wonder if it's freshly squeezed? Before that, let's open the bottle first. The bottle was opened without any spurts of POP. Stirring! The aroma is of koji and rice brine. There is no sweetness when you drink it, and the koji aroma goes straight through. The fruit and freshness is Nassin In My Heart at this moment. The first day is not so good. The sweetness opens up a little when it is cooled down, but it is still walking a little too slowly, so I'm going to seal it up today! Second day Well, there is no change. More seizure. 6th day The gas is still strong and a little bit spooky. The sweetness has finally reached its peak, but this may be the peak yet. The koji flavor is juicy, with a hint of ginjo, a little bit of rum, a fox and a raccoon dog (huh?). I think there are different tastes for this sake. I recommend it cold with a lot of gusto! The complexity of the flavor increases. However, the bitterness is a bit annoying and the ginjo aroma fights with the malted rice flavor, making it a bit noisy. I would have liked to taste it with non-ginjo polished rice of 70% or more. By the way, when I dropped in at JR Yamanaka Brewery yesterday, a group of four guys in rough clothes with a big age difference came in. They said, "Oh? Are you off to sake-no-wa?" I thought, "Oh, no, they're not!

Genmai is at Wada Sake Shop in Toyonaka, and Shinshu Kamerei is at Hata Sake Shop in Ibaraki. Shinshu Kamerei is scheduled to arrive early next month. If you call or inquire at the store, they will let you know if they have it in stock.
