This sake was a junmai ginjo from Omachi last year, but they have changed it drastically 🤩.
100% Kitashizuku used
Polishing ratio 50%.
Alcohol 15%.
Sake degree -5, Acidity 1.6
It is a limited edition spring sake, and the label on the back says that it reflects the beauty of the Kujukuri-hama coast, which looks different in each season.
When the bottle is opened, the aroma is slightly sweet, but it is not the lactic acid beverage-like aroma of nigori sake.
In the mouth, it still feels a little sweet, but it has a tight acidity that is different from that of Senkou, and because it is tight, it also feels moderately spicy.
The aroma on the nose is also mild and moderate, so it seems to go well with anything you serve it with.
