The color is nearly transparent, and the aroma of maturity is prominent.
In the mouth, the flavor of matured rice spreads. The ginjo aroma is subdued, but this accentuates the umami in the clear junmai ginjo flavor.
It has the sharpness of a dry sake, giving the overall impression of a classic mellow sake.
Personally, I would say that this is a sake for enjoying umami, and it is dramatically delicious lukewarm.
