3. The mouthfeel is dry without being sweet, as is typical of Gohyakumangoku. The bitterness and pungency do not persist, and the aftertaste is moderately pleasant. However, a little umami and acidity would be nice. Ihyakumangoku, 60% junmai, unfiltered, raw sake, about 2,500 yen, Sake-no-Osawa, Omimachi Market.
