It seems that after the Ozawa Brewery in Akabane, Tokyo, closed, it was taken over by a brewery in Saitama City, Saitama Prefecture, as the Koyama Honke Brewery.
I have been to the brewery in Akabane once, but how many years ago?
Once again, "Tokyo Morishige" is a nice name.
Is it dry?
It is said to be a junmai ginjo, but I don't think it has that much of a ginjo character.
I think it has a strong umami.
It can be served at room temperature or lukewarm.
It is true that it is better not to cool it too much.
I would definitely like to try it again!
