The aroma is a classic of slight acidity and slow umami. Lactic acid, kabosu acid, rice and a little grain flavor.
In the mouth, it has a soft umami sweetness centered around citrus lactic acid. Then the umami comes in slowly. It is a classic "acid-umami" style. It feels like you are drinking sake.
I had a feeling that the flavor would change after a while, so I only tasted it on the first day.

The umami has mellowed a bit, and the classic flavor has somehow become more modern. The acidity is still the same, but it's softer and prettier.
It's good. I like it better than the first day.
If I were to compare it to Ghibli, it would be Kayo from "The Wind Rises. She is the younger sister of the main character, Jiro. When she first appears, she is a child, a kimono classic who likes her brother but is somewhat grumpy. When it appears as an adult, after Jiro's marriage, her clothes are modern, she's cute, and she's so talented that she's in medical school.
