It is hot, sour, strong, bitter, etc., and shows various faces as it rolls around in the mouth until it is swallowed. It is a sake with an interesting character, although it may not be to everyone's taste.
The name "Hyakunin Isshu" fits perfectly.
It is a spicy sake with little sweetness, but it is not all about spiciness, and as mentioned above, it can be enjoyed because of its many faces.
As the temperature rises slightly, the complexity of the flavor subsides and the intensity increases. The top aroma is very much that of Hyogo sake, with a slight gasiness.
