Good acidity, a little bitterness in the throat afterwards. The mouthfeel is medium to slightly thick. The umami prevails a little. It doesn't have a classic feel, but that doesn't mean it's modern.
I bought a bottle of the Co-op's private brand sake "Niji no Banquet," which was on the Co-op's year-end and New Year's leaflet, to try out the freshly squeezed sake that is popular every year.
The label says that because it is freshly squeezed, the fruity aroma and fresh raw taste are exceptional, but, to be honest, I don't think I will buy it next year. The price was reasonable at a little over 1,000 yen, but since it was on the shelf, I doubted if it was even fresh sake. If it's unpasteurized, shouldn't it be refrigerated? There is no indication that it needs to be refrigerated, and I am not sure about this sake.
After a night, the alkaline taste became stronger and the acidity was a little bit lowered. Takana pickles went so well with it that it made me laugh.
