The aroma is of a sweet-al flavor with a hint of maturity and a hint of acidity, as if the flavor is on top. This looks delicious.
When you put it in your mouth, you can taste the matured sweetness and acidity. It is gentle, but you can feel the rich accumulation of years. From there, sweetness comes first, followed by a soft spread of umami, and finally, firm umami.
It is soft and smooth.
It has strength, but the curvature has been removed and it has become gentle.
It is natural because it was chosen for me, but it goes very well with bamboo shoots. It seems to go well with Japanese food in general, especially this kind of gentle simmered dish.
If I were to compare her to Hana Matsuzaki from "From Up on Poppy Hill" in Ghibli, I would say that she is the grandmother of the main character, Umi.
