I think very few people know about this sake.
A friend of mine from junior high and high school used to brew it until 2000.
This is the first sake that my friend has brewed since last year in order to revive it.
The name of the sake is "Shikishima".
I don't mean to patronize my friend, but I think this sake will become famous in the future.
Special Junmai unfiltered unpasteurized sake
It has a gentle aroma and a light mouthfeel, with a slight acidity, but the aftertaste flows down nicely.
It tastes good even when it is warmed up, and it will go well not only with Japanese food but also with French and Italian food.
If this quality can be maintained, I think it might become a household name in Japan.
