I've always wanted to try Igarashi's Yamahai! How does it taste like? I'm sure that the combination of Igarashi's strong sake quality and the wildness of Yamahai will make an extraordinary sake... I'm going to enjoy it with a strange sense of excitement that can't be described as a fearful feeling. And it is a Hosono Shoten limited edition oorigarami!
It is slightly sparkling. Therefore, you will feel the energetic taste.
The sweetness is surprisingly moderate due to the strong acidity. While the sweetness is kept in check, the umami is of course strong. It also has a pungent taste, perhaps due to the high alcohol content of 17 degrees Celsius, which gives the impression of drinking sake. It does not have much bitterness, so it may not be like Igarashi.
Overall, it tastes like Igarashi, but the combination of Igarashi-ness and Yamahai-ness makes it very thick.
It is a food sake, but it also has the potential to be enjoyed on its own. It is a fun sake without a calm atmosphere!
By the way, it has all the elements of junmai, unfiltered nama-hara, orikarami, yamahai, and nao kumi, which is funny.
