I bought this after tasting it at the brewery that brews Diachiku in Chino City. It has no label on the front 😳it is a raw sake with alkaloids. Every December, locals come to buy this sake.
It's been six months so it doesn't have a lot of pizzazz, but they say it's very stable.
I first tried it cold.
Alcohol content: 20%.
The taste is pleasant, with a nettled rice flavor and a hint of sweetness. The spiciness that comes afterward is also nice.
On the second day, we served it lukewarm.
It was very tasty with a deep sweet flavor spreading through it. It makes you feel refreshed.
It went well with the tsukudani (food boiled in soy sauce) of wakasagi (smelt) and sea bream that we bought in Suwa.
This sake is good with hot pot and 🍢, and I would like to drink it in winter.
