This is one that I purchased at Mashidaya before I cut back on alcohol. It has been sitting in the refrigerator for some time, and now it is time to open the bottle. The sake rice is Aiyama from Tojo Eifuku Village in Hyogo Prefecture The rice polishing ratio is undisclosed. The alcohol content is a low 12 degrees. Fire-aged sake. The aroma when the bottle is opened is soft and elegant with a gorgeous fragrance. Not too sweet. When you take a sip, it has a soft mouthfeel. It is soft and has a slightly effervescent taste. Aromatic sweetness and umami spread gently in the mouth. A fresh and light acidity spreads along with the sweetness to finish the taste. It is easy to drink, with a clear, clean taste. The sweetness lingers slightly in the mouth. Delicious. Enjoy it slowly and savor it.
