8/10 The owner served us a variety of different temperatures. I had never had the idea of making nigori or nama-shu at 60 degrees Celsius, so I was surprised when I drank it and found it to be delicious. I thought it might be too sweet, but it wasn't, and I felt it still had a freshness to it (this might just be a comparison with other heated sake). It was an interesting experience. I will try this at home.
