This sake is brewed using the Muromachi period brewing method, Mizumoto (Bodai-moto).
When you drink it, there is no aroma, and the flavor is slightly reminiscent of Muscat. It has a sour taste like cheese. And yet, it goes down the throat smoothly and cleanly.
I wonder if people in the Muromachi era were drinking this kind of sake? I feel something romantic❤️.
