The last time I drank the 2024 Yamadanishiki version cold, I was quite impressed.
The aroma is light and mellow with a sense of maturity.
After drinking, it has a juicy acidity and a plump rice flavor.
A little bit of syrupy sweetness.
Later, in the back, there is a slight earthy flavor, like cooked flower beans.
The bitterness is tightened and the umami lasts for a long time.
I like it. I like it.
