The owner explains that this is a trial brew from Nabeshima and will probably never be made into a commercial product using this method and will never be served again.
It smells like yogurt. In the mouth, it is sweet, with a strong acidity that sticks to the tongue. After that, there is a hint of coconut. (I call it the coconut scent because I haven't studied sake properly) The alcohol is also quite strong, and the aroma is far from my favorite.
I got a glimpse of the brewery's efforts to create a wonderful sake that was carefully selected through repeated trials like this one.
