Brilliant, colourless, clear. Mild and soothing aroma, reminiscent of plain yoghurt. The intensity of the aroma is moderate. The mouthfeel is mellow and smooth. The aroma has a subtle sweetness reminiscent of Kamishinboshi, sharp acidity and bitterness. It is crisp and has a short aftertaste. It is a refreshing sake.

It's been a long time since I've had a sake like this.
When I think about it, during the local sake boom 30 years ago, all the cats and lads were making a fuss about how "light and dry" sake was good, and Koshino Kanbai was the representative of that, and the price was unfairly raised.
