All of the sake is unfiltered, unpasteurized sake. WASHIN OMACHI Junmai Ginjo Unfiltered Unrefined Nama Sake Well-balanced with a strong umami flavor. WASHIN Yamadanishiki Junmai Daiginjo Unfiltered Unrefined Nama-ginjo-genshu The aroma is gorgeous. It has a sourness, but the sweetness is too clear and a bit lacking. There is bitterness later on. I heard that when ethyl caproate is released, bitterness is released. Wasshin Yamadanishiki Junmai Ginjo Unfiltered Unrefined Nama-shu. The sweetness is strong at first, but the aftertaste is refreshing. WASHIN Asahi Junmai Sake Unfiltered Nama-shu It has a strong flavor typical of junmai sake, but the aftertaste is refreshing. Although it is an unfiltered nama-shu, the overall aftertaste is very refreshing, and I thought it might be more dry, but I was right.
