Hirata Sake Brewery in Gifu. This is their first time.
Hida-no-Hana is a very dry sake with a +17 rating, and Hi-Sagi is a sweet sake with a gorgeous sweetness. They change the brand name according to the taste, don't they?
According to the description of the brewery, it is an unfiltered, unpasteurized sake. The rice is Hidahomare.
The rice is Hidahomare, and it is brewed by a toji who used to work at Nanbata in Wakayama.
It seems that they started doing business with him after he moved to Minamikata because of the connection with Minamikata.
According to my neighbor's liquor store, the World's First Brewery in Minakata has been downsizing, and they said that the taste has changed since the toji changed and the sales person who used to come to the store is no longer there, so they quit doing business with them. It's kind of a sad story 😢 Well, I think I don't see Minakata any more than before 🤔.
I think you should at least put a note that it needs to be refrigerated if it's a draft sake.
I heard it's almost only sold directly, so I guess they're not very careful about that.
It's a little floral, light, and beautifully sweet. Apple-like fruitiness. It's a refreshingly light wine.

There are a lot of sake I don't know about that I haven't tried either 😅.
I don't think it's the type of sake you like 💦 it's too light and halfway sweet 😁.
