The first sake of the New Year's holiday is here 💁.
I couldn't resist the influence of the Hiran Classic I drank before going back home, so I decided to open this bottle for my first nightcap at my parents' house 😅.
Well, it's a good thing I've decided not to open the New Year's Day bottle yet💦.
The nose has a citrusy aroma that is typical of Hiran, with a hint of peach.
The overtone aroma is citrusy like lemon, green apple, and white peach.
The umami is less pronounced than I expected, and this time the taste is softer and more beautiful ✨.
It has a beautiful sweetness that is typical of Aizan, as well as the gasiness, acidity, and umami that is typical of Tobiran, but it feels a little light like a happy new born.
The taste impact is at the beginning. After that, it gradually settles down, and from the middle to the latter half of the bottle, a refreshing bitter taste like lemon comes out and it finishes quickly 🤔.
It's also delicious 😍.
I've never seen them use it in their sake 🤔.
The yeast is also from Urakasumi, where I trained, and I was impressed to see how much respect they have for the yeast!
The label is also stylish and I think it makes Hiran the best 😍.
