I opened a bottle of Ishidaya that I've been saving for a year because I was too lazy to open it: ‼️
The aroma is very mild, yet evocative of a fresh umami flavor 🤤.
The mouthfeel is clean and clear with an elegant umami with a sense of maturity 😋.
It is not flashy, but the complex balance of bitterness, acidity, and umami makes for a superb taste. ‼️
