The one you can sample at the bar is a fresh brew, and the one you buy by the bottle is fire-roasted.
The tingling sensation of the carbonation is clearly evident. It's low in alcohol content, quite sweet and tastes like melon itself. There is almost no alcoholiness to it, so if you don't like sake, or if you like sweet drinks, this was a muddy sake to try. Those who can drink it may find it a little underwhelming.
