Shotoku" Junmai from Fushimi, Kyoto. Neat, clear, clean acidity, and again mildly expansive when warmed. Comparatively elegant and gentle impression. The label is also nice and classical. When considering typical and classical sake, Fushimi and Nada sake cannot be missed. I am from Niigata Prefecture, so I have been fortunate to drink light Niigata sake of stable quality in the ordinary and honjozo classes since my early drinking days, but Niigata sake is different from the classical sake of Fushimi and Nada, and I respect them.
