This is a local sake. Recently, I have been drinking a little bit of Igarashi Sake in secret, and while it is a little bit hit or miss, it is quite tasty. When you drink it, it has a pleasant and elegant ginjo aroma. There are many things that make Igarashi sake good, but I think one of them is its aroma. It is refreshing and summery. The acidity helps to boost the freshness of the aroma. It is light, but has a rather decent umami flavor with a hint of sweetness, which is surprising even to amateurs of sake. The bitter taste, which is typical of Igarashi, seems to make the experts roar from the middle to the latter half of the bottle. There may be people who do not like this bitterness, and if it were eliminated, it could spread nationwide even more quickly than it does now. However, if the bitterness were eliminated, the sake would clearly lose its individuality, and this is exactly what the Igarashi Sake Brewery is all about: individuality! I would like to support this fusion of modern and classic flavors. Igarashi is still delicious! I would like to try the yellow-labeled Junmai, and next year I would like to try the Omachi Namaizu, which I missed out on this year.
