For my second cup at the Fukushima Sake Specialty Shop, I chose a refreshing umaguchi. This masculine sake has a subtle aroma of rice, a hint of sourness and alcohol, and a robust umami that takes care of everything. It was like a man in a field of wheat that looks good with a jinbei after a summer fireworks display. If I say why I'm bound by the fireworks display analogy today, it's just because that's the mood I'm in. It's because of the demons of summer.
