The other day, I gave my father a birthday present: a bottle of freshly squeezed sake from Kagano-i, a sake brewery in his hometown of Itoigawa. I said it was a gift, but we drank it together and shared some of it. Kaganoi Sake Brewery has recovered from the Itoigawa fire, It is the westernmost sake brewery in Niigata. The aroma is gorgeous and fruity, Mellow and soft, The flavor is round, soft, and has the fullness of Takananishiki, It is easy to drink and refreshing, while still maintaining the robust flavor of unfiltered raw sake. It is easy to drink, Well-balanced acidity and a hint of sweetness. Clear and crisp, The sake is clear, crisp, and easy to drink. I almost drank too much! Delicious. Kaganoi does not make a sake lid, so my map of Niigata sake lids is not filled. I think Joetsu Sake Brewery said they were going to make a sake lid this year, but I wonder what happened to that...?
