This is Homasu, as it is a comparison to Yamadanishiki.
I have never seen this sake rice used outside of its native region.
It seems to be a native variety of Kumamoto Prefecture.
Compared to Yamada-Nishiki, it has a slightly more acidic nuance.
The sweetness is the same, but the aroma is more of a vinegared iso type.
I can feel a little sweet and sourness.
I prefer this one.
