Last year I was lucky enough to be able to buy a bottle of Tasake's light nigori, which I couldn't afford last year by a hair's breadth.
The first cup was only the supernatant, and we enjoyed the fresh acidity that is typical of new sake!
The second glass, when mixed with the ori, was a perfect match with the rich sweetness and flavor!
I almost finished it on the first day, but I will try to hold on and enjoy the changes tomorrow and the day after!
