I heard that Urasato's light nigori was well received early last year when it started, and I think it has quickly made a name for itself as a popular sake this season, but it's too late for a review now lol.
It has a botanical aroma of chewy gyuhi (rice cake), grass, and grains. At this point, it is quite distinct from the others, and to be honest, I really like the aroma! LOL!
First, the supernatant...unlike what I had imagined from the rumors, the sweetness is quite restrained. It has an excellent balance of umami and acidity, and has little bitterness. The body is surprisingly medium, with a unique texture that is very satisfying.
When the tailings are mixed in, the unique muddy flavor can be felt at once, and the impression is similar to famous muddy sake such as Sengoku Yukidaruma, Natur nigori, and Tetorigawa Shirajusyu. No wonder this sake exploded in popularity this BY. The aroma of fruity banana, which is a good point of banana, extracted skillfully and gently, must have been popular.
In fact, it was made quite softly, so there was no harshness of alcohol or spikiness on the palate, and it was just easy to drink and understand, yet gentle to the end! Impressive!
